Snickers cake

Snickers cake is a decadent treat inspired by the popular Snickers candy bar. It combines layers of chocolate cake, caramel, peanuts, and a creamy frosting. Here's a recipe to make a rich and delicious Snickers cake from scratch:

Ingredients:

For the chocolate cake:

  • 1 3/4 cups (220g) all-purpose flour
  • 1 1/2 cups (300g) granulated sugar
  • 3/4 cup (65g) unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup (240ml) whole milk
  • 1/2 cup (120ml) vegetable oil
  • 2 tsp vanilla extract
  • 1 cup (240ml) boiling water

For the caramel filling:

  • 1 cup (200g) granulated sugar
  • 6 tbsp unsalted butter
  • 1/2 cup (120ml) heavy cream
  • 1/2 tsp sea salt (optional)

For the peanut layer:

  • 1 cup (150g) roasted peanuts (salted or unsalted)

For the frosting:

  • 1 cup (230g) unsalted butter, softened
  • 3 1/2 cups (440g) powdered sugar
  • 1/2 cup (45g) unsweetened cocoa powder
  • 1/4 cup (60ml) heavy cream
  • 2 tsp vanilla extract
  • A pinch of salt

For decoration:

  • 1/2 cup (120ml) caramel sauce
  • 1/2 cup (75g) chopped peanuts
  • 2-3 Snickers bars, chopped

Instructions:

1. Bake the chocolate cake:

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  • In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add the eggs, milk, oil, and vanilla extract. Beat on medium speed until well combined.
  • Stir in the boiling water until the batter is smooth (it will be thin).
  • Divide the batter evenly between the prepared pans.
  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

2. Prepare the caramel filling:

  • In a medium saucepan, heat the granulated sugar over medium heat, stirring constantly until it melts and turns a deep amber color.
  • Carefully add the butter (it will bubble up) and continue to stir until the butter is fully melted.
  • Slowly pour in the heavy cream while stirring (be careful of splattering). Continue to cook and stir until the caramel is smooth.
  • Remove from heat and stir in the sea salt, if using. Let the caramel cool to room temperature.

3. Prepare the frosting:

  • In a large bowl, beat the softened butter until creamy.
  • Gradually add the powdered sugar and cocoa powder, mixing on low speed until combined.
  • Add the heavy cream, vanilla extract, and a pinch of salt. Beat on high speed until the frosting is light and fluffy.

4. Assemble the cake:

  • Once the cakes are completely cooled, level them if necessary.
  • Place one cake layer on a serving plate or cake stand. Spread a layer of caramel filling over the cake.
  • Sprinkle half of the peanuts on top of the caramel.
  • Place the second cake layer on top and frost the top and sides of the cake with the chocolate frosting.

5. Decorate:

  • Drizzle the top of the cake with caramel sauce.
  • Sprinkle chopped peanuts and pieces of Snickers bars over the top for decoration.

6. Chill:

  • Refrigerate the cake for at least 1 hour to allow the flavors to meld and the frosting to set.
