- 1/2 cup (120ml) vegetable oil
- 2 tsp vanilla extract
- 1 cup (240ml) boiling water
For the caramel filling:
- 1 cup (200g) granulated sugar
- 6 tbsp unsalted butter
- 1/2 cup (120ml) heavy cream
- 1/2 tsp sea salt (optional)
For the peanut layer:
- 1 cup (150g) roasted peanuts (salted or unsalted)
For the frosting:
- 1 cup (230g) unsalted butter, softened
- 3 1/2 cups (440g) powdered sugar
- 1/2 cup (45g) unsweetened cocoa powder
- 1/4 cup (60ml) heavy cream
- 2 tsp vanilla extract
- A pinch of salt
For decoration:
- 1/2 cup (120ml) caramel sauce
- 1/2 cup (75g) chopped peanuts
- 2-3 Snickers bars, chopped
Instructions:
1. Bake the chocolate cake:
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
- In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, milk, oil, and vanilla extract. Beat on medium speed until well combined.
- Stir in the boiling water until the batter is smooth (it will be thin).
- Divide the batter evenly between the prepared pans.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
2. Prepare the caramel filling:
- In a medium saucepan, heat the granulated sugar over medium heat, stirring constantly until it melts and turns a deep amber color.
- Carefully add the butter (it will bubble up) and continue to stir until the butter is fully melted.
- Slowly pour in the heavy cream while stirring (be careful of splattering). Continue to cook and stir until the caramel is smooth.
- Remove from heat and stir in the sea salt, if using. Let the caramel cool to room temperature.
3. Prepare the frosting:
- In a large bowl, beat the softened butter until creamy.
- Gradually add the powdered sugar and cocoa powder, mixing on low speed until combined.
- Add the heavy cream, vanilla extract, and a pinch of salt. Beat on high speed until the frosting is light and fluffy.
4. Assemble the cake:
- Once the cakes are completely cooled, level them if necessary.
- Place one cake layer on a serving plate or cake stand. Spread a layer of caramel filling over the cake.
- Sprinkle half of the peanuts on top of the caramel.
- Place the second cake layer on top and frost the top and sides of the cake with the chocolate frosting.
5. Decorate:
- Drizzle the top of the cake with caramel sauce.
- Sprinkle chopped peanuts and pieces of Snickers bars over the top for decoration.
6. Chill:
- Refrigerate the cake for at least 1 hour to allow the flavors to meld and the frosting to set.
Enjoy your Snickers cake! It's a rich and indulgent dessert that’s perfect for special occasions or whenever you're in the mood for a decadent treat.
